Mini Carrot Loaves
These Mini Carrot Loaves are so tasty and not too sweet! The recipe is really simple so take a look below and have a go!
Mini Carrot Loaves

Ingredients:
- 300g Light Brown Sugar
- 300ml Sunflower Oil
- 3 Eggs
- 300g Pain Flour
- 1 Tsp Bicarbonate of Soda
- 1 Tsp Baking Powder
- 2 Tsp Cinnamon
- 2 Tsp Ginger
- 300g Grated Carrots
- 200g Raisins
- 300g Icing Sugar
- 50g Unsalted Butter (at room temperature)
- 125g Cream Cheese
Method
1. Preheat the oven to 180oC and prepare your mini loaf cases (I got mine from Asda) or cupcake cases – the recipe makes about 12 mini loaves.

2. Put the Sugar, Sunflower Oil and Eggs into a bowl and mix until you have a thick caramel coloured mixture.

3. Now add your dry ingredients; Flour, Bicarbonate of Soda, Baking Powder, Cinnamon & Gingers and give a thorough mix.

4. Finally, stir in the Carrots and Raisins and transfer to your cases. Bake in the middle of the oven for approximately 20-25 mins.

6. To make your Cream Cheese icing, mix your Cream Cheese and Butter together then gradually add in the icing sugar mixing thoroughly.

7. Once the carrot cakes are cool, top with a layer of Cream Cheese Icing and decorate with a fondant Carrot!
